4 boneless pork loin chops, cut 3/4 " thick
salt & pepper
1 Tbsp olive oil
2 sweet potatoes, bake, peel, slice 1/2 " thick or mash with a little butter
21 oz can of apple or peach pie filling
2 tsp curry powder
8 oz sugar snap peas, fresh or frozen

Directions:
Directions:
Season pork with salt and pepper
In a skillet brown pork on both sides in hot oil.
Place chops in baking dish. Put slice or scoop of sweet potatoes on pork chop.
Combine pie filling and curry powder; spoon over sweet potatoes.
Add sugar snap peas.
Cover and cook 20 to 30 minutes at 350*
