1 1/2 tsp minced garlic
1 tsp ground Chile paste
1 Thai Chile chopped
1/2 c Asian fish sauce
2/3 c hot water
2 T freshly squeezed lime juice
1/4 c sugar
2 T grated carrot

Directions:
Directions:
With a mortar & pestle pound garlic, Chile paste and Chile into a paste. Combine with fish sauce, hot water, lime juice and sugar. Whisk until sugar dissolves and carrot and serve.
