1/2 C. Brown Sugar (not packed)
2 T. Cornstarch
16 Oz. Can Pineapple Chunks
1 C. Water
2 T. Vinegar
1 Green Pepper, cut in strips
1-1/2 - 2 C. Cubed Ham
3 C. Cooked Rice

Directions:
Directions:
Combine brown sugar and cornstarch in a large saucepan. Add drained pineapple syrup, water and vinegar. Cook, stirring constantly until clear and thick. Stir in pineapple, green pepper and ham. Cook until heated through. Serve over hot cooked rice.

This recipe came from an Uncle Ben's rice box. I've made it many times to use up ham left over from a holiday dinner.
