3 pork tenderloins

Rub:
2 T cumin seeds, toasted and ground
2 T coriander seeds, toasted and ground
4 dried chiles
2 T kosher salt

2 T vegetable oil
1/4 c maple syrup
1 pineapple sliced in 1" rings
3 ripe peaches halved and pits removed

Directions:
Directions:
Roast spices and grind with salt and reserve. Heat oven proof skillet until very hot, add oil, sear pork on all sides for 2-3 minutes until a golden crust is created. Remove from pan, rub tenderloins with maple syrup and pat on dry rub until coated. Place back in pan or on baking sheet, place in 400 oven and bake 15 - 20 minutes until slightly pink in the middle or 160º.
Remove from heat, tent and let rest 15 minutes.
Grill fruit until marked and slightly tender.
