Sirloin steak - slice against grain thin
1 red pepper - sliced thin
2 shallots sliced thin in circles
1 T oil (not olive)
1 can coconut milk
4 oz unsalted chicken stock
1/2 tsp coriander
1/2 tsp cumin
1 tsp paprika
1 tsp thai red curry paste
1 lime juiced
2 T sugar
2 T fish sauce

Directions:
Directions:
Heat oil. Saute shallots and red curry paste till fragrant. Add 1/2 c coconut milk. Add coriander, cumin, paprika, stir simmering for 1 - 2 minutes. Add strips of beef coat with mixture and saute gently 2 - 3 minutes. Combine stock, lime juice, sugar & fish sauce and add to pan.
Add rest of coconut milk and simmer gently for 5 minutes. Add peppers and simmer another 8 - 10 minutes.
Before serving add basil leaves turn off heat and let rest for 5 minutes.
Serve with Jasmine rice and garnish with fresh cilantro
