1 1/2 c oil
2 c flour
2 c sugar
1 tsp cinnamon
2 tsp baking soda
1 sm can crushed pineapple - drained
2 c carrot grated
2 c coconut
1 c nuts - chopped
3 eggs
2 tsp vanilla
1 tsp salt

Directions:
Directions:
Oven 275 - 350º
Combine oil, eggs and vanilla.
In bowl of stand mixer combine remaining ingredients. Slowly add oil mixture and mix until combined. Bake 1 hour at 275º, increase heat 350º and bake 1/2 hour or until tester comes clean.
Frost with cream cheese icing.
