1 and 3\4 cups vegetable broth
1 and 1\2 cups plain couscous
1\2 cup raisins
2 and 1\2 tbsp butter
3\4 cup chopped walnuts
1\2 bunch celery, thinly sliced crosswise and leafy celery tops finely chopped and separately
1 small or 1\2 large red onion, finely chopped
juice and zest of 1 lemon
salt and pepper

In a large saucepan, bring the vegetable broth to a boil. Stir in the couscous, cover the pan, and remove from heat. Let sit for 10 minutes, or until the liquid is completely absorbed. Transfer the couscous to a large bowl, add the raisins, and cover to keep warm and to soften the raisins. In a skillet, melt 1 tbsp butter over medium heat, add the walnuts, and cook until toasted (about 4-5 minutes). Transfer to a plate. Melt the remaining 1 and 1\2 tbsp butter in the skillet, add the onion and celery slices (but not the leafy tops) and cook until tender (about 10 minutes). Stir in the lemon juice and zest and season with salt and pepper. Stir cooked vegetables, celery leaves, and walnuts into couscous. Serve warm.
