1 cup light brown sugar
1 cup white granulated sugar
1\2 cup vegetable or canola oil
1\4 cup butter, softened
3 eggs
2 tsp vanilla extract
2 cups shredded zucchini
1\2 cup applesauce
1\3 cup orange juice
2 cups all purpose flour
1 cup light wheat flour
2 tsp baking soda
1 tsp baking powder
1 tsp salt
1 tsp ground nutmeg
2 tsp ground cinnamon
1 cup chopped walnuts

Directions:

Preheat oven to 350º. In a large bowl beat together both types of sugar, oil, butter, eggs, and vanilla extract until well blended. Stir in zucchini, applesauce, and orange juice. In a separate bowl, combine both flours, baking soda, baking powder, salt, nutmeg and cinnamon. Stir well. Add dry ingredients to zucchini bowl and mix just until combined. Gently stir in nuts. Pour batter into 2 greased and floured 9 inch loaf pans. Bake for 60-70 minutes or until toothpick inserted in the center of the loaf comes out clean. Let cool in the pans for 10 minutes, then remove and let cool completely.
