1 Large Cucumber, Sliced
1 Onion, Thinly Sliced
1 Tsp. Salt
1/2 Tsp. Mustard Seed
1 C. White Sugar
1/2 C. Distilled White Vinegar
1/4 Tsp. Celery Seed
1/4 Tsp. Ground Tumeric

Directions:
Directions:
Combine all the ingredients in a medium sized microwave safe bowl. Microwave on high 7 to 8 minutes, stirring twice, until cucumber slices are tender and the onion is translucent. Transfer to a
jar that has been sterilized. Seal and chill in the refrigerator. Makes about 3 cups of crispy, tasty pickles.

When I make them again, I will cut back on the sugar to about 3/4 cups.

Donna Phillips, who is the wife of our Construction Coordinator, made these for us last summer. She said they would be good in the fridge for 30 days, but we ate them in less than a week!
