1 med Butternut Squash approx 3 lbs
1 T butter
2 T Onion chopped
1 egg
1/2 c milk
1/2 tsp dry mustard
1/2 tsp salt
pepper
1/2 cheddar cheese grated

Directions:
Directions:
Poke squash with sharp knife a few times then place in Microwave for approximately 2-3 minutes, this makes the squash easier to peel. Cut squash into chunks & peel. Insert into boiling water, cover and cook until tender, drain and mash. Melt butter add onion and saute until tender 2-3 minutes. Combine squash, onion, egg, milk, mustard, salt & pepper, mix well and place in greased casserole. Sprinkle with cheese. Bake 375 oven, 25 - 30 minutes or until edges brown.
