Banana Pudding Recipe

1 - 12 oz. box vanilla wafers
5 ripe bananas, sliced
4 c whole milk
1 c sugar, or sugar substitute
2/3 c all purpose flour
6 egg yolks
1/4 tsp salt
1 tsp vanilla
Meringue
6 egg whites
1/2 c sugar

Preheat oven to 325'

Whisk together the milk and next 4 ingredients in a heavy bottom pot or double boiler. Whisk constantly for about 15 minutes or until pudding is nice and creamy. Remove from heat and stir in vanilla. Pour 1/4 into bottom of an ovenproof 2 qt bowl. Put down 1/3 of vanilla wafers.. Now add 1/3 of bananas. Repeat layers twice more. Cover with remaining pudding. Set aside. Make meringue (don't worry, it's easy).
Beat egg whites on medium until foamy then begin to slowly add sugar. Beat until the sugar dissolves and stiff peaks form. Spread the meringue over the pudding, SEALING to edge of bowl. Bake for 15 minutes or golden brown.

You can eat this hot or cold. We like it cold. Craig loves the banana pudding at The Great American Steak Buffet in Myrtle Beach. We go every year. I like the fabulous shrimp, Ty loves the chicken, Logan is crazy about the prepared to order steak, but Craig really only goes for the pudding. This is our attempt to rival the GASB's banana pudding. He thinks we almost got it.
