1 lb tomatoes, cored
1/3 cup olive oil
4 garlic cloves, smashed
2 tsp dried oregano, or 1 tbsp fresh oregano leaves
1 cup packed fresh basil leaves, torn
1 tsp coarse salt
1/4 tsp crushed red pepper flakes
1 lb spaghetti or other pasta
Freshly grated Parmesan cheese, for serving

Directions:
Directions:
Rip the tomatoes into small pieces and place in a large serving bowl. Pour in the olive oil. Add garlic, oregano, basil, salt & red pepper flakes. Stir all to combine. Let the mixture marinate, covered, at room temperature for at least 1 hour and up to 8 hours.
Cook pasta for 2 minutes short of the package instructions. Do not overcook. Drain pasta & put into the bowl with the sauce. Toss to combine. Serve with grated cheese.
