1-1/2kg Good Ghee
1kg Sugar
1/4kg Sugar (prepare burnt sugar for colouring & keep aside)
1kg Self rising flour
24pcs Eggs
1kg Finely chopped dried Fruit (a little more than 1kg won’t harm!!)
(Soak in dark rum/liquior for however long you want)
raisins, candid peal, apricots, cherries, prunes, dates, etc. a little ginger preserve)
250gm chopped nuts (cashew, almonds, waltnuts)
1 tsp Spice powder (Nutmeg, cinnamon & cloves)
1 tsp Vanilla Essence
1 tsp Almond Essence
1 tsp Baking powder
A little salt.

Directions:
Directions:
Powder sugar and knead with the ghee for about 10 minutes then add in flour a little at a time
along with the egg yolks to make the mixing easy (do not use the egg white unless it becomes
too difficult to knead the mixture you can use a little of the egg white). Then add the fruits
gradually, followed by the nuts, spice powder, essence, baking powder, salt and the burnt sugar.
Then bake at least ½ hour or until done.

Put the mixture in the baking tins when you are ready to put the tins in the oven do not put in
the tin and allow to stand for a long time as this will allow the fruits to sink to the bottom, so
when you put the mixture in the baking tins you can mix a little and put it.
