Base
2 c. flour
1/2 c. icing sugar
1 c. cold unsalted butter

Filling
1/4 c. flour
1/2 tsp. each baking powder and salt
2 eggs
1-1/2 c. brown sugar
1 c. almonds, finely chopped
3/4 c. maraschino cherries, drained & chopped

Topping
1/4 c. cherry juice or milk
3 tbsp. unsalted butter, softened
1/2 tsp. almond extract
2 c. icing sugar

Directions:
Preheat oven to 350ºF. Spray a 9"x13" pan with oil. In a bowl, using a fork, stir flour with 1/2 cup icing sugar. Using a pastry blender or two knives, cut in 1 cup butter until coarse crumbs form. Press over bottom of pan and bake until light golden around edges, 25 to 30 minutes. Meanwhile, mix flour with baking powder and salt. In another bowl, beat eggs, then stir in brown sugar. Gradually stir in flour mixture, then almonds and cherries. Spread over warm base. Bake in a 350ºF oven until filling is set, 25 - 30 minutes. While filling is baking, in a small bowl, using an electric beater, beat cherry juice with 3 tbsp butter and almond extract. Gradually beat in 2 cups icing sugar until fluffy. Cool bars, then evenly spread icing over top. Refrigerate at least 2 hours before cutting into bars. Store in an airtight container. Refrigerate up to 1 week or freeze up to 1 month.
