1 can pitted black cherries
1 T sugar
1 T cornstarch
1/3 c orange juice
1/4 c. kirshwasser or cherry brandy
1/4 c. cognac
Half gallon French Vanilla Ice Cream

Directions:
Directions:
Drain juice from cherries into a saucepan. Keep cherries separate. Add orange juice to the pan. Combine sugar and cornstarch. Heat the juices just before service. Use the cool kirshwasser or cherry brandy to mix the sugar mixture into a smooth paste. Add to the warm juice and heat stirring constantly until it thickens. Add the cherries and heat thoroughly. if it gets to thick, thin with a little more juice. Warm the cognac in a small sauce pan. You can light the cognac and pour over the cherries shaking the pan to keep the flame, or you can pour the warm cognac into the cherries and heat together and then light the pan. When the flame goes down serve over French Vanilla ice cream in a fancy glass

Impressive if you can flame at the table just before service. To do that make sure the liquor is warm and you might want to add a high proof rum to get the quick light. Be careful as it will flame quick and end quick. don't forget to dim the lights so the guests can see the flames.
