6 qts of peeled, cut-up tomatoes
1 tbsp salt
4 large onions chopped
2 green peppers chopped
1/4 to 1/3 stalk celery sliced
1 cup vinegar
2 cup sugar
1 or 2 hot peppers finely diced (try 1 and taste, 2 makes it pretty hot)
1 stick cinnamon
Make a bag and tie loosely inside 1 1/2 tbsp pickling spice

Cook tomatoes until you have room for the rest of the ingredients. Simmer- stirring, occasionally for several hours. If you have a heat defuse to put on the burner you can put heat higher and it will cook down faster. Cook at simmer, it will take most of the day to cook down until it is rather thick.
The cinnamon stick is just dropped in the kettle with the other ingredients, also the bag with the pickling spice in it is just put in kettle. When chili sauce is thick enough remove the cinnamon stick and spice bag. Put in hot sterilized jars and seal.
