Ingredients:  
1-2 lbs boneless chicken (breast, thigh or...) - cut up small;
1 Can (each) Cream of Mushroom, Cream of Chicken, & Cream of Cheddar soup
2+ cans of water (enough so the soups are mixed, but mixture is not real watery)

1 Bag frozen veggies (your choice; I use mixed w/extra corn or whatever is liked the best)
1-2 Box Stove-Top stuffing mix (I use 2 to get a better consistency)

In large crock pot, add all ingredients except veggies & stuffing. Cook on low minimum of 4 hours (all day works well).
About 45 minutes before dinner add the veggies & stuffing mix, stir all together. Cook until bubbly on top, serve. Best over buttermilk biscuits.
