1 Medium Butternut Squash
5 Medjool Dates (pitted and quartered)
1 Onion
˝ Cup Balsamic Vinegar
3 Tbsp Olive Oil

Directions:
Directions:
Preheat the oven to 425
Peel the butternut squash and cut into cubes.
Mix the balsamic vinegar and olive oil. Pour over the cubed butternut squash. Place in a roasting pan and bake for approximately 25 minutes.

While the squash cooks chop the onion and pit and quarter the Medjool Dates.
Once the squash has baked for 25 minutes add the onion and dates, stir and return to the oven. Bake for another 25 minutes. Stir once or twice during the baking process. Depending on how large you’ve cubed your squash will depend on the baking time. Pierce with a fork to check tenderness of the squash
