Rice: 1 lb. white rice, 1 1/2 qts. boiling water, 1 tbsp. salt, 2 eggs, 1/8 lb. butter, 1/2 c. grated Romano cheese.
Filling: 1 onion finely chopped, 4 tbsp. olive oil, 1/2 lb. chopped beef, 1/4 lb chopped pork, 2 c. canned tomatoes crushed, salt and pepper to taste.
Coating: 2 eggs well beaten, 2 c. grated bread crumbs.

Cook rice in boiling salted water until just done. Do not overcook. Drain off all excess water and do not rinse the rice. While rice is still steaming hot, stir in 2 eggs, one at a time, with a wooden spoon. Stir in butter and grated cheese. Mix thoroughly. Cover and let cool. Rice mixture must be firm and solid for handling. In the meantime, saute onion in olive oil until tender. Add meats and brown thoroughly. Add tomatoes and seasonings. Let simmer in an uncovered saucepan, stirring occasionally until sauce is reduced to a paste. Let cool. For the final step, work near the sink, as hands must be rinsed often. With a large wooden spoon, scoop a spoonful of the rice mixture and place in left hand. Add a tsp. of meat mixture in center and cover with another spoonful of rice. Shape into round balls rinsing hands often to facilitate shaping. Dip into beaten eggs and roll in breadcrumbs, coating thoroughly. Make all balls before frying. Fry in deep hot fat until golden brown. Drain on brown paper. Keep warm until serving time.
