5# 4 oz Bread Flour. 4# 3 oz Water. 3/4 oz yeast. 1.75 oz salt.

In mixing bowl: Mix water and yeast. Add flour and mix on high with a dough hook for 5 minutes. Add salt and mix for additional 8 minutes.

Proof for 2 hours. Preheat oven 420º. Scale dough to 6-8 oz portions. Place on cornmeal lined sheet pans. Be gentle in handling dough, or you will deflate it!. Let dough rest for 15 mins. Put sheet pans in oven. Bake until golden brown, and sounds hollow.

Roasted red pepper ciabatta bread is great. Add diced roasted red peppers into dough mixture after adding salt. Dough will have a red tint to it. Very Yummy!
