1/2 oil. 3 TBS Butter. 1/4 White Onion, Small Diced. 1 THICK slice of onion. 3 Garlic cloves. 1 TBS Jerk. 1 quart Heavy Cream. 4oz light Rum. 15 oz can of cream of Coconut. 5 oz toasted coconut.

Heat oil and melt butter in a thick bottom pot. Insert cloves on one side of thick cut onion and cover the opposite side of onion with jerk seasoning . Sear each side of onion in butter and oil. Remove whole thick onion slice with the cloves. add diced onions and carmelize. Flambé Rum. Add heavy cream and cream of coconut. Add toasted coconut at the end.
