3 oz Butter
3 garlic cloves
3 ea Onions (med dice)
3 ea Leeks (small dice)
4 TBL Flour
Salt and pepper to taste
1 lbs Diced or Crushed tomato puree
1 ea bouquet Garni (sack of 2 sprigs fresh thyme
2 dried bay leaves, Leafy greens from 2 celery stalks,6 sprigs fresh parsley)
1/2 cup Dry White Wine
1/2 Gallon Light Chicken Stock

Directions:
Directions:
Heat butter in a rondo. add onions, minced garlic, and leeks and saute until onions are translucent. Add the flour and cook for 5 mins. (low heat). stirring frequently. Add tomatoes and cook for 5 mins. Add hot stock and wine. Simmer for 3 minutes, then increase heat to high and whisk until soup comes to a rolling boil. Lower the heat to a simmer and add the Bouquet Garni. Simmer 35 minutes. Season with S/P.
