Pie Crust for 1 - 10 in. Double Crust Pie
5 c. gooseberries
2 c. sugar
1/3 c. tapioca
2 T. oleo
small amount of cinnamon/sugar mixture
3 T. milk
1 T. sugar

Directions:
Directions:
Mix gooseberries, tapioca & sugar together. Put into pie crust, dot with oleo, sprinkle a bit of cinnamon/sugar over the top. Top with the other crust, crimp edges, cut vents, brush with milk, and sprinkle with just sugar.
Bake in 425º oven for 30 minutes then turn down to 350º and bake another 45 minutes (or so). Crust should be brown and juices should begin to bubble. To avoid burning edges of crust, put foil around the edges for the first 30 minutes.

This was my father's (Bob Poe) favorite pie, made by his sister, Juanita Poe Yoswig. I used her recipe for the Labor Pie Contest in Greenview, IL in 2011 and won 1st place!
