1 pkg Betty Crocker Banana quick bread mix
3/4 c water
3 tbsp vegetable oil
2 eggs
1 can (8oz) crushed pineapple, drained and liquid reserved.
1/4 c flaked or shredded coconut
Pineapple glaze (see below)
2 tbsp flaked or shredded coconut, if desired.

Heat oven to 450*F. Grease bottom only of 8 or 9 in square pan. Stir quick bread mix, water, oil and eggs in medium bowl until blended. Gently stir in 1/3 c of pineapple and 1/4 c coconut. Spread in pan.
Bake 8 in pan 35-40 mins and 9 in 25-30 mins or until toothpick comes out clean. Cool completely about 1 hour. Spread with pineapple glaze and sprinkle 2 tbsp coconut on top.

Pineapple Glaze:
1 c powdered sugar
1 tbsp butter or margarine melted
1 tbsp liquid reserved from crushed pineapple
remaining drained crushed pineapple (about 1/4 c)
