2 cups cooked, mashed butternut squash
1 tsp salt
1/4 (scant) cup of maple syrup
1 Tbsp firmly packed dark brown sugar
2 Tbsp cornstarch
3 eggs, separated
1/2 cup melted butter
1 1/2 cups whipping cream

Directions:
Directions:
Preheat oven to 350 for 1 hour. Butter a 1 1/2 quart baking casserole.
Combine squash, salt, syrup, brown sugar and cornstarch. Beat until fluffy. Add egg yolks, whipping cream and butter. Mix thoroughly. Beat egg whites until fluffy, fold into squash mixture. Pour into casserole dish. Bake at 350 for 1 hour. Serve immediately.
