1 tbsp canola oil
1 cup chopped tomato
1 cup chopped onion
1 cup chopped carrots
1 cup chopped celery
1 jalapeņo
4 minced garlic cloves
1 bay leaf
1/4 tsp dried Mex. oregano
8 cups chicken stock
1 1/2 lbs. chicken
2 green onions
3 limes juiced
2 cups roasted corn
1 larger can of hominy
avocado
cilantro

Directions:
Directions:
Add oil to soup pan with onions, celery, carrots, and chopped jalapeņo; cook on medium-high until soft. Add garlic, bay leaf, and mex oregano and stir for about 1 minute. Add tomato, cook 3-4 minutes. Add chicken stock, hominy, and corn, and bring to a boil. Add roasted chicken (shredded) Reduce heat and simmer 40-60 minutes. Add green onion and lime juice. Season to taste. Garnish with avocado and cilantro.
