4 green onions finely chopped, 1 green pepper finely chopped, 1/2 c. olive oil, 1 c. rice, 1 (15 oz.) can tomatoes cut up drained, 1 c. tomato juice. 1. c. water, 1 tsp. salt, 1 tsp. oregano, chopped parsley

Directions:
Directions:
Saute onion and pepper in oil for about 3 min. Add rice. Cook stirring frequently until rice is lightly browned. Add tomatoes, juice, water and seasonings. Bring to a boil, cover and cook over low heat until the rice is tender and the liquid is absorbed. Sprinkle with parsley and serve.
