8 oz cream cheese, softened
1/3 cup sugar
2 egg yolks
2 Tbsp. ricotta cheese
1 Tbsp. lemon zest
¼ tsp. salt
2 sheets puffed pastry
Egg wash

Directions:
Directions:

1) Mix the cream cheese, sugar, egg yolks, ricotta cheese, lemon zest and salt together with an electric mixer.

2) Cut each sheet of puffed pastry into quarters. Place 1-2 Tbsp. of filling in the center of each square of pastry. Brush egg wash around the edges. Fold two opposite corners together in the center. Repeat with other two corners. It should look like a diamond shape.

3) Cover a baking sheet with parchment paper. Place the danishes on the baking sheet and place in the refrigerator overnight.

4) Preheat the oven to 400 degrees. Bake the danishes for 20 minutes, turning the sheet once.
