1 tbsp. butter
1/2 c. + 2 tbsp granulated sugar
1/4 c. + 2 tbsp all-purpose flour
pinch of salt
2 large eggs
1 c. chilled heavy cream
3/4 c. whole milk
2 tsp. grated orange zest (optional)
1-1/2 c. fresh or thawed frozen cranberries

Preheat oven to 400º. Butter 1-qt. baking dish (not metal). Sprinkle 2 tbsp. granulated sugar over bottom. Stir remaining 1/2 c. sugar, flour, and salt in a large bowl. Gradually whisk in eggs, cream, milk, and zest.

Scatter cranberries in dish, pour batter over top. Bake until pitted, slightly set, and brown around edges (32-34 min). Let cool for 15 min. on a wire rack.

Serve by slicing in squares (if cooked in rectangular dish) or pie slices (if cooked in circular dish).
