2 c. flour
1 c. quick or old fashioned oats, uncooked
1 t. baking soda
1 t. ground cinnamon
1/2 salt
1 c. butter, softened
1 c. packed dark brown sugar
1 egg, slightly beaten
1 t. vanilla
1 c. Libby's solid pack pumpkin
1/2 raisins

Optional: Can add 1 c. walnuts

Directions:

1. Preheat oven to 350 degrees. Grease cookie sheet.
2. Combine flour, oats, baking soda, cinnamon and salt.
3. Cream butter, gradually add brown sugar, and beat until light and fluffy. Add egg and vanilla; mix well.
4. Alternate additions of dry ingredients and pumpkin, mixing well after each addition.
5. Drop approximately 1/4 c. dough onto cookie sheet.

Important! This is a soft cookie when baked so and the dough will be gooey clump when putting it on the cookie sheet. Sold during the fall in our 'More Than Cookies' bakery.
