1- 32oz pkg cubed hash browns, thawed
1 lb bacon, cooked and crumbled
2 cups shredded cheddar cheese
1 large tomato, chopped
8 eggs
2 cups milk
1/4 tsp salt

Directions:
Directions:
In a large bowl, combine hash browns, bacon, 1 cup cheese, tomatoes and salt. Spoon into a 9x13 baking dish. In a bowl, beat eggs and milk until smooth. Pour over hash brown mixture. Top with remaining cup of cheese. Bake uncovered at 350º for 50-60 minutes. Let set for 10 minutes before serving.

You can substitute 1 lb cooked sausage or 2 cups cooked diced ham for the bacon.
This dish may be prepared in advance & refrigerated overnight. Let stand at room temp for 30 minutes before baking.
