1-3/4 cups elbow macaroni
2 cups shredded cheddar cheese
3 tbsp finely chopped onion
3/4 tsp salt
2 tbsp melted butter
2 cups small curd cottage cheese
1 - 8oz carton sour cream
1 egg, beaten
1/2 cup soft bread crumbs

Directions:
Directions:
Cook macaroni according to pkg directions, drain. Combine macaroni, cheese, onion, salt, cottage cheese, sour cream & egg, blending well. Spoon into a greased 2-qt casserole. Combine bread crumbs with butter, sprinkle evenly over casserole. Bake uncovered at 350º for 45 minutes.

This is a delicious but rich mac & cheese. It came from a co-worker who was from Georgia. The recipe is from a Birmingham, Alabama Baptist Church cookbook. I found that if I mixed together the cheeses, sour cream, onion, egg & salt before adding the macaroni that made a smoother mix.
