1 large or 2 regular size cans sweet potatoes or yams
1 c. sugar
1 stick butter, softened
2 eggs, slightly beaten
1 tsp. vanilla
1/2 cup raisins

TOPPING:
1 c. brown sugar, packed
1/4 c. flour
1 stick butter, softened
1 c. chopped pecans
1 c. mini marshmallows

Directions:
Directions:
Drain the sweet potatoes, then place into a large mixing bowl; mash with potato masher; add sugar, butter, eggs and vanilla using an electric handheld mixer; beat on low to mix well; mixture will become creamy but lumpy; hand stir in raisins; pour mixture into a medium casserole dish that has been sprayed with nonstick cooking spray. Bake at 350º for about 30 minutes. Prepare topping while baking souffle.

In medium mixing bowl, blend sugar with flour, add butter and mix well with fork (will be crumbly); stir in pecans. Spread topping on baked souffle; top with layer of marshmallows; return to oven and bake for an additional 5-10 minutes until brown sugar mixture is bubbly; add marshmallows, bake a few more minutes until lightly browned. Let stand a few minutes before serving.

Variation: May also add shredded coconut with the raisins.
