6-8 red potatoes with skins
salt and pepper
herb seasoning
olive oil

Directions:
Directions:
Clean potatoes and cut in large bite size chunks, place in large mixing bowl; stir in just enough olive oil to slightly coat potatoes; add salt and pepper to taste; add favorite herb seasoning such as Cavenders to taste, stir to help coat potatoes. Place on a foil lined cookie sheet that has been sprayed lightly with nonstick spray; spread potatoes evenly and bake 25-30 minutes at 450º stirring only once halfway through cook time.

Tip: Potatoes can be cooked without skins, if preferred.
Variation: In a small mixing bowl, stir together 2 diced tomatoes, adding some salt, garlic, basil and olive oil to coat tomatoes; mix well. Pour over hot potatoes when removed from oven just before serving.
