Approximately 4 1/2 c all purpose flour
2 packages active dry yeast
1 1/2 cups warm water(110-115 degrees)
4 tbsp sugar, divided
1 tbsp salt

Directions:
In a mixer bowl, combine 1 1/2 cups flour and the yeast. Combine warm water, 3 tbsp sugar and salt. Pour over the flour mixture. Beat at low speed for 1/2 minute, scrapping bowl. Then beat on high speed for 3 minutes. Stir in as much flour as you can mix with a spoon. Turn out onto a lightly floured surface. Knead in enough remaining flour to make a moderately stiff dough that is smooth and elastic.( 6 to 8 minutes) Cover with a dishtowel and let rest for 10 minutes. Cut into 12 portions and shape each portion into a smooth ball. Punch a hole into the center of each with your thumbs. and pull gently to make a 1 1/2 to 2 inch hole. Place on a greased baking sheet , cover again and let rise for 20 minutes. Broil 5 inches from heat 3-4 minutes, turning once( tops should NOT be brown.) Heat 1 gallon water with 1 tbsp sugar to boiling. Cook 4-5 bagels at a time for 7 minutes, turning once;drain. Place on a greased baking sheet and bake at 375º for 25-30 minutes.


Light rye bagels( Mom's favorite)
Prepare as above, except substitute 1 1/2 rye flour for some of the white.

I used to make these for Mom and she always made me feel good by saying they were better than the ones from the bakery. And yes- they're broiled, then boiled, then baked.
