2/3 c raisins
small amount of rum or vodka
1/2 c butter, softened
1/2 c brown sugar
2 tbsp honey
1 egg
5 tbsp water
2 tsp vanilla
scant 3/4 c whole wheat flour
1/4 c white flour
1 tsp salt
3/4 c instant oatmeal
zest from one lemon, finely shredded

Directions:
Directions:
Preheat oven to 350º. Line cookie sheet with parchment paper. Place raisins to soak in liquor. Beat together butter, brown sugar and honey. Add egg, water and vanilla. Stir in flours, salt, oats and lemon peel. Finally, add rum-soaked raisins. Roll cookie dough into balls approximately the size of walnuts. Place on cookie pan and lightly press to flatten. Bake for 15 minutes, or until cookies are golden brown.
