2 cups shredded cheddar cheese
3 cartons (4 oz each) egg product or 6 large eggs, well beaten
1 can evaporated milk
1 tsp salt
1/2 tsp pepper
1 pkg shredded hash browns, frozen
1 medium onion, chopped
1 cup ham -optional

Directions:
Directions:
Pre-heat oven to 375 degrees. Grease 13 x 9 inch baking dish

Combine eggs, cheese, evaporated milk, salt and pepper in large bowl. Add potatoes, onion and ham, mix well/ Pour mixture into prepared dish.

Bake 60 to 65 minutes or until set.
