2 Tbsp. olive oil
2 lbs. ground beef
1 1/2 Cups chopped onions
1 3/4 Cups slivered carrots
1 3/4 diced celery
1-2 Tbsp. minced garlic
48 oz. tomatoes (6 cups) diced or canned
2 Cups red kidney beans
2 Cups white kidney beans
88 oz. beef stock (11 cups)
1 Tbsp. oregano
1 1/2 tsp. tabasco sauce
2 1/2 tsp. pepper
5 tsp. parsley--fresh and chopped
48 oz.(6 cups) spaghetti sauce (without meat)
8 oz. dry pasta shell macaroni or another small
pasta
2 bay leaves

Saute beef in oil in large 10 quart pot until beef starts to brown. Add onions, carrots, celery, garlic and tomatoes, simmer for 10 minutes. Drain and rinse beans and aid to pot. Add beef stock, oregano,pepper, Tabasco, spaghetti sauce, and dry uncooked noodles. Simmer until veggies are tender (about 45 minutes)

I leave out the oil and only brown the meat. This recipe has a kick from the tabasco and pepper so leave out and add your own to your personal bowl if you're not into spicy. I also go heavy on the veggies adding extra.
