Banana Cake
1 stick + 1 Tbsp butter
1 cup sugar
1 teaspoon baking soda
3-4 large ripe bananas
2 cups all purpose flour
3 teaspoons baking powder
1 cup milk
2 teaspoons vanilla

Cream Cheese Icing
4.5 oz cream cheese (a little more than half a block)
2 cups powdered sugar
1 teaspoon vanilla
2 tablespoons liquid (can be lemon juice, melted butter or water)

This cake is easy and quick to make. It is prepared in one bowl and does not require any complicated steps. Mixture can also be put into muffin tins and makes approximately 16 muffins. Reduce cooking time to 15-20 minutes.

Cake: Preheat oven to 350 degrees. Melt butter in larger bowl in the microwave. Add sugar and stir with a wooden spoon. Mash bananas, then add to the mix along with the baking soda. Mix well. Stir in flour and then add milk and vanilla. Mix again with spoon until well combined. Pour into greased bundt pan and cook for 35 minutes or until skewer inserted comes out clean.
Icing: Beat all ingredients together with an electric mixer until smooth. Spread evenly over cooled cake and serve. This icing is creamy and rich. It makes the banana cake even more delicious.
