4 large potatoes, peeled and cut into 2-inch pieces
Butter
Milk
Salt
2 tsp Olive Oil
1 cup onions, chopped
2 medium carrots, diced
2 medium stalks celery, diced
1 can corn, drained
1 lb ground beef or turkey
3 TBSP all-purpose flour
1 TBSP fresh rosemary or 1 tsp dried
1 tsp dried thyme
Salt and Pepper
2 cups chicken broth

Directions:

1. Preheat oven to 400 degrees.
2. Place potatoes in large saucepan with enough water to cover. Bring to a boil and simmer until potatoes are fork-tender. Drain; add butter and milk; mash. Season with salt.
3. Meanwhile, heat oil in skillet over med-high heat. Add onion, carrots and celery; cook until soft. Add beef/turkey and cook until browned. Stir in corn. Add flour, rosemary, thyme, salt and pepper; stir to coat. Add broth and bring to a simmer; simmer until mixture thickens, about 3 minutes.
4. Transfer turkey mixture to a deep-dish pie plate or round casserole. Spread mashed potatoes over top. Cover and bake until potatoes are golden, about 30 minutes.
