3 c flour
1 1/2 c sugar
1 1/2 tsp baking powder
1/4 tsp salt
3/4 c shortening
3/4 c butter, softened
2/3 c orange juice
1 lb candied cherries, cut in half( I used green and red)
1 lb candied pineapple
1 lb walnuts, coarsely chopped
4 oz flaked coconut

Measure all ingredients except fruit and nuts into a large mixer bowl. Blend 1/2 minute on low speed, then 3 minutes on high speed, scraping bowl occasionally. Stir in fruit and nuts. Spread mixture in greased pans or spoon into paper lined cupcake tins. Bake until a wooden pick inserted into the middle of the cake comes out clean, 2 1/2-3 hours for loaf pans, considerably less for cupcake size. Makes 2 9"x5" loaves, 8 mini-loaves, about 30 cupcake sized.

Try this one- I promise you'll like it! No booze, no weird fruit, light batter. I used to make this in cupcake tins as a part of my Christmas cookie trays, until I found out that people were THROWING IT AWAY because they're so afraid of fruitcake. Be brave- you won't be sorry.
