1 lb boneless chicken breast, cubed
1 tbs vegetable oil
1 c onion, chopped
2 garlic cloves, minced
3 cans chicken broth, 14.5 oz
2 cans cannellini beans, 15 oz drained
1 can diced green chile peppers, 7 oz drained
1 tsp dried oregano leaves
1/2 tsp cumin
dash ground red pepper

Directions:
Directions:
Saute' chicken with oil, onion, and garlic until no longer pink. Add broth, beans, peppers, oregano, cumin, and red pepper. Simmer 20 minutes.

Can be served with 1 tablespoons shredded Monterey Jack cheese and cornbread.
