4 Tbsp butter
2 cups chopped onion
1 large garlic clove minced
3-5 large peeled potatoes coarsely chopped
1-2 large carrots chopped
3 cups chicken stock
1 tsp dried dill
4 oz cream cheese
1 & 1/2 cups milk
1-2 cups grated sharp cheddar cheese
salt & pepper to taste

Directions:
In a large soup pot sauté the onions and garlic in butter until onions are translucent. Add the potatoes and carrots and sauté for 5 to 10 minutes longer. Add the stock and dill and simmer until it rises and tender. Purée the veggies with cream cheese and milk in a blender. Return to soup pot. Season with salt and pepper. Stir in cheese. Reheat gently. Garnish with cheese ,parsley ,and sour cream.
