4 carrots, peeled and sliced
2 lg. onions, halved and thinly sliced
3 lb. chicken pieces, skinned
half cup raisins
half cup dried apricots, coarsely chopped
14 oz can chicken broth
fourth cup tomato paste
2Tbsp. flour
2Tbsp. lemon juice
2 cloves garlic, minced
1-1/2 tsp. ground cumin
1-1/2 tsp. ground ginger
1 tsp. ground cinnamon
hot cooked couscous
pine nuts, toasted
fresh cilantro

Directions:
Directions:
In a large slow cooker place carrots and onions. Add chicken to cooker, top with raisins and apricots. In a separate bowl whisk broth, tomato paste, flour, lemon juice, garlic, cumin, ginger, cinnamon and 3 tsp black pepper. Add to cooker. Cover, cook on low heat for 6 to 7 hours or on high heat for 4 to 5 hours. Serve in bowls with couscous. Sprinkle with nuts. Garnish with cilantro.
