1 envelope Knox gelatin
1 Cup of sugar
1/4 cup flour
1 3/4 cups milk
1 tsp vanilla
1/4 tsp almond extract
3 egg whites
1/4 tsp cream of tartar
1/2 cup whipping cream, whipped
1 Cup coconut
1 9-inch crust

Directions:
Directions:
In saucepan combine gelatin, 1/2 cup sugar, and flour. Add milk all at once. Cook and stir until thickened and bubbly. Cook and stir for 2 minutes. Remove from heat. Add vanilla and almond. Chill until the consistency of beaten egg whites.

Beat 3 egg whites with the cream of tartar until soft peaks form. Gradually beat in the remaining 1/2 C of sugar, beating until stiff peaks form. Fold this mixture into the gelatin mixture.

Fold in the whipped cream and the coconut. Pour the mixture into the baked pie shell. Refrigerate for 3-4 hours or until firm.
