15 small red potatoes (about 2#)
1/3 cup butter
1/4 C minced FRESH parsley
2 Tbls FRESH minced chives
1 1/2 tsp minced fresh tarragon or 1/2 tsp dried
2-3 cloves of garlic, minced
6 strips of bacon, cooked and crumbled
1/2 tsp salt
1/4 tsp pepper

Cut potatoes in half and place in a sauce pan. Cover with water and bring to a boil. Cook until tender...about 10 minutes. Drain well.
In a large skillet, melt butter. Add parsley, chives, tarragon, and garlic. Cook and stir over med high heat for 1-2 minutes. Add the potatoes, bacon, salt and pepper. Toss to coat and cook until heated through.

Dried chives will make this dish bitter. Using dried tarragon is fine. This is a really good potato recipe and had become a family favorite.
