1 cup uncooked white rice
3 tbsp. butter
Pinch of salt
1 tbsp. vanilla (may need more)
1 1/4 to 1 1/2 cups sugar (may need more)
1 pint half and half
1/2 pint (small milk carton size) whipping cream
Approximately 1/2 cup milk

Cook rice with water and 1/2 cup sugar. The KEY is to cook it slow and once it is boiling, turn the heat to medium or medium low, stirring often (about every 15 - 20 minutes). Overall, it will take around 30 - 45 minutes. Make sure the rice is completely tender. Drain off the water. Add cream, half and half, 3/4 cup sugar, butter, salt and vanilla. Cook on low for approximately 30 - 45 minutes. If mixture is too thick, add a small amount of milk (do not want it too soupy). May need to add more sugar and/or vanilla to suit your taste. Serve topped with cinnamon.

We eat this as dessert the first day and then for breakfast the next morning. This is a favorite from Granny Scott for many in my family. The key is to make sure the rice is completely tender and to cook it slow - do not get in a hurry.
