2 – 8 oz. pkgs. Cream cheese, softened
½ c. sugar
2 eggs
1 tsp. vanilla
Pecan Sandie cookies (I used Keebler)

Directions:
Directions:
Line muffin tins with foil muffin liners. Place cookie in the bottom.

Mix first four ingredients with hand mixer until smooth. Fill each muffin cup ¾ full. Bake at 400º for 10 min. Refrigerate. Top with favorite things, cherry pie filling, fresh fruit, lemon curd, whipped cream – you name it!

You can also use the mini-muffin pans to make tiny cheesecakes. I think you can buy the mini-Pecan Sandies for the crust. Great for showers or brunches!
