Meat sauce:
¾ lb. ground beef
½ lb. Italian sausage
½ tsp. pepper
¼ tsp. minced garlic
1 lb. 12 oz. can crushed tomatoes
15 oz. can tomato sauce
Dash of Tabasco
1 tsp. oregano
1 envelope spaghetti sauce mix
1 bay leaf

Cheese mixture:
12 oz. cottage cheese or 1 lb. ricotta cheese
2 eggs, beaten
1 Tbsp dried parsley
½ tsp. pepper

1 lb. grated mozzarella cheese
8 oz. no-boil lasagna noodles

Directions:
Brown meat until crumbly and drain. Add rest of meat sauce ingredients and simmer for 30 minutes. Remove bay leaf.

If using cottage cheese, I put all in the blender. Otherwise, mix together cheese mixture.

Coat bottom of greased 9 x 13 pan with small amount of meat sauce. Layer with noodles, cottage cheese mixture, mozzarella and meat sauce. Repeat noodle through meat sauce layers 2 more times, ending with meat sauce. Sprinkle top with ½ c grated Parmesan.

Can be frozen or refrigerated at this point. Cover tightly with foil and bake at 350º for 1 hr – 1 hr 15 min. Let stand 15 minutes before serving. If cold, it will take longer to bake.

P.S. I almost always double the recipe and put one lasagna in the freezer. It’s hardly any trouble to make 2 when you’re making 1!
