* 3 cups Greek Yogurt (or regular plain yogurt, strained)
* juice of one lemon (about 3 T)
* 1 to 2 garlic cloves, chopped
* 3 medium cucumbers, seeded and diced
* about 1 T kosher salt for salting cucumbers
* 1 1/2 T finely chopped fresh dill
* Kosher salt and fresh ground black pepper to taste

1. Strain the yogurt (you can line a funnel with a coffee filter and place a bowl underneath (approximately. 2 hrs)

2. Peel cucumbers and scrape out the seeds

3. Cut cucumbers into thick slices and put in a colander placed in the sink. Sprinkle on salt and let cucumbers release water and drain for at least 30 minutes or more

4. Pat cumbers dry with a paper towel to remove any excess moisture

* 5. (If you are making this as a sauce or marinade) Put the cucumbers, garlic, lemon juice, dill, and black pepper into food processor and process with the steel blade until cucumbers are finely chopped

**5. (If you are making this as a stand alone dish) do not process the cucumber, just mix the cucumber, garlic, lemon juice, dill and black pepper in a bowl

6. Stir the cucumber mixture into the Greek yogurt (or yogurt you've drained.) Let this refrigerate at least 2 hours before serving

* For a vegan version, substitute plain soy yogurt (or almond yogurt) for the Greek yogurt
